- Spinach pie:

- *preheat oven to 400F - or 200C

- 16 sheets filo (filo is easier to work with if at room temp for 2 hours)
- 1/4 C melted butter

- 6 C. washed, chopped spinach
- 1 med. onion
- 2/3 C. feta cheese
- 2/3 C. cottage cheese
- 2 eggs
- 2 tsp fresh OR 1/2 tsp. dried oregano
- 1/4 tsp. salt
- 1/4 tsp. black pepper

- Sautee chopped onion in a little butter, add spinach, reduce heat to
- med/lowish and cover, cook about 3 min or until spinach shrinks down a
- little.

- Mix spinach and onion with cheeses, eggs and seasonings in large bowl.
- On a cookie tray, spread 8 filo sheets, one at a time, using a pastry
- brush to spread melted butter. Spread spinach and cheese mixture over
- buttered filo, and repeat buttering proceedure with top 8 sheets (you may
- need to melt a little extra butter). Tuck under the edges, (about a 1"tuck)
- Bake at 400F (200C) for about 20 min or until golden, let stand 5 minutes
- before cutting.
